Stuffed cabbage
Ingredients:
Green cabbage,
tomato purée,
vegetable stock,
potatoes,

Take a green cabbage,
Cut out the heart of the cabbage
Place the stuffing in the centre in layers (stuffing / leaves).
Fold over the outer leaves so that the stuffing cannot drop out.
Put the cabbage in a large saucepan
Add vegetable stock and a small amount of tomato purée
Leave to simmer for 2 hours over a low heat
Serve hot with potatoes.

Sheep offal in tomato sauce

I’ve never eaten this recipe, but I’m giving you this recipe because it’s a typical dish of Lozere.


For 6 - 8 people.
Cooking time: 2 h.
Preparation: 15mn.

Ingredients:

1, 5 kg of sheep belly
300g of onions
250g tomato purée
¼ litre of white wine
12g of salt
4 cloves of garlic finely crushed
1 pinch of the 4 spices
Pepper
5 cl of oil
Recipe

1. Slice the onions thinly. Add the oil to the pan and fry the onions for 5mn.
2. Chop the sheep belly in thin strips of 5cm to 1cm, put it in the pan with the onions and put the ¼ litre of white wine, 250g of tomato puree, the salt, the pepper, the 4 cloves of garlic finely and the pinch of 4 spice.
3. mix well, cover and cook for 2 hours on a low heat.
4. After you can serve this with mashed potatoes.

Aligot

Preparation : 25min Cooking : 25 to 30min


Ingredients for five people :

1 kg of potatoes
1 glass of fresh cream
¼ of litre of milk leated
400g Laguiole or Cantal cheese
1 clove of garlic
Salt and pepper

Preparation:

Cook the potatoes with their skin in salted water. During this time cut the cheese fresh in fine slices, peel the garlic. When the potatoes are cooked, peel then and mash then potatoes. Add the fresh cream and hot milk. Incorporate little the cheese. Raise the mixture with the spoon to stretch it.

September-December

In September we came back to school and the weather was hot and sunny. At the end of September .The leaves fell from the trees, it went colder and it begam to rain. This ye r there were more mushrooms than the year before. In December it snowed and it was very cold. For Christmas we decorated the cafeteria at school and there was a party for the boarders. We took photos of all the pupils in school.

January-March

We come back to school on January 3rd. It’s still very cold and we still have some snow.


Tartiflette with the reblochon and ham of Ardennes.


For 4 People.


Ingredients:
-1 reblochon (cheese from Savoie)
- 1 kg of potatoes
-200g bacon bits
-2 onions
- 3 dl of fresh cream
- Salt and pepper

Preparation: 20 minutes
Cooking: 35minutes

Preheat the oven to 190°c
Cut the potatoes into small cubes .Cut the onions up finely.
Salt and Pepper.
In an enamel dish (that you can be used for table), put a layer of potatoes , a layer of potatoes , a layer of bacon bits some pieces of reblochon from which you have removed the crusts. Repeat the operation to form three layers.
Cover with fresh cream and slip into the oven, for 35 minutes.

Serve hot with a mixed green salad.

Enjoy your meal!!!

p.s:I like this recipe because I like cheese and in winter it warms you up.

Recette :

- 1 kilo potatoes

3. Add the onions to the pan. When they are golden brown sprinkle the flour over them.Mix.
4. Add 50 cl water, salt and peper. Stir until it boils. Leave to simmer
5. Peel potatoes and cut them.
6. Put them in the pan .
7. Cover and cook for 30 -40 minutes.

Butter of Snails « à la Bourguignonne »

Ingredients for 5 people:
* 1 box of 5 dozen snails
* 200gr butter .
* 12gr parsley .
* 12gr garlic .
* 6gr shallot .
* Salt, pepper,
* 60 empty snail shells

Preparation:
- Finely chop parsley, garlic and shallot.
- Soften the butter , then incorporate the parsley, garlic, shallot, salt and pepper.
- Introduce a snail into each shell, and stuff then with the prepared mixture.
- Cook 10 min thermostat 7 (180 °C) and accompany by a dry white wine.

Good apetite

Beef bourguignon
The beef bourguignon is the prototype of the winter dish. Multiple versions exist.
Difficult :
Easy, with 15 minutes of preparation and 3 hours of cooking without monitoring. Courses pour 5 personnes :
1,5 kg of ox lodging
300 gr. Pig belly
1/2 tsp salt
2 broad onions
1 bouquet garni
1 bottle red wine
2 spoons with soup of flour
2 bone with marrow
1 carrot
1 glass cognac
Recette :
•
• In a pan you add the onion thin slice and the pig belly cut into bits
• You fry the onion
• You add the beef cut into cube of 4/5 cm and you leave to brown
• You add the 2 spoon of flour to brown the meat
• You cover with the wine and you supplement with some stock or some water until cover all the meat
• You add, the bone with marrow, the bouquet garni and the sliced carrot
• Bring to boil
• You add the glass of cognac
• You reduce the heat and you leave to simmer covered for 3 hours

This winter, there has been lots of snow and wind .The temperatures are low and it is cold. I've chosen this receipt because it’s my favorite.

This is the recipe that my parents use to make black pudding for their restaurant but I don’t like it.
1. 4 onions
2. 1 litre pig’s blood
3. ¼ litre of fresh cream
4. salt and pepper
5. chilli, thyme, coriander
6. oil
7. intestines

1. Peel 4 onions. Slice them finely. Cook them in oil.
2. When they are golden brown add the pig’s blood, and a pinch of chilli pepper and the thyme and coriander.
3. Mix everything then add a 1 litre fresh cream
4. Put everything into the intestines
5. Cook slowly for 20 minutes in a saucepan of water
6. Take the black pudding out of the pan and leave to cool
7. Eat with apple purée or mashed potatoes.

For 4 persons:

- 4 black Pudding
- 800 grams of apples
- 1 lemon
- 100 grams of butter
- Salt
- ground Pepper

PREPARATION
peel apples, to cut them in to quarters, take out the cores and the pips.
Put the lemons with the apples and to cut them into two.
Melt half of the butter in a pan. Put apples and brown them on average heat while often turning them over. Serve with warm black pudding

This winter was cold and long because it don’t finished today, but there wasn’t lots of snow exept one time in Janurary, and it was sometime raining and often cloudy.

This winter the weather wasn’t very nice… There was snow and the temperature was very cold.
I chose this recipe because I like this cake.
Brown’s Brownies
Ingredients:
1/2cup butter or margarine 5 tbsp cocoa 1 cup sugar 2 eggs 3/4 cup flour
Directions:
Preheat oven to 350°F (175°C) Melt butter on stove, add cocoa and stir until smooth Add sugar, eggs and flour to cocoa mixture Put mixture in a greased and floured pan Bake at 350°F (175°c) for 25 minutes or until a toothpick, inserted in the centre, comes out clean.

Coupetade
For 10 people
Slices dry bread
sugar
10 eggs
1 litre of milk
vanilla essence
grapes
prunes
Put the dry prunes and grapes in a large round dish. Place, the dry bread.Make a custard with the milk, eggs and sugar. Add vanilla essence. Pour over the bread. Place in a hot oven.When the coupetade rises, it is cooked. When it’s cold the following day it sinks. We can add over a little more of blank and reheat.We can pour strawberry, bluberry, blackberry, raspberry jam over it.

This winter in lozere was very cold up to -15 degrees. We have had lot of snow.

Duck breasts
Ingredients:
1 Shallot, Salt, pepper
50 gr. of Pine nuts
2 duck steaks 2 tablespoons of cider vinegar 2 tablespoons of liquid Honey
Instructions:
Heat some oil in a frying pan.
Roast the Pine nuts 2 minutes. Reserve.
Place the steaklets on the skin side.
Fry them for 6 minutes over a hot gas.
The skin must be golden brown.
Peel and slice the shallot.
Withdraw the steaklets.
Throw the used oil away.
Put the steaklets back in the pan and leave to cook 2 to 3 minutes on the other side
Keep the steaklets warm and prepare sauce.
Add shallot in the frying pan.
When it is transparent, add the vinegar.
Leave to reduce one minute then add the honey.
Mix well. Add the steaklets.
Coat them with sauce.
Serve with roasted pine nuts. Accompany by a gratin Dauphinois for example. It’s very delicious.

Fish broth recipe :

For 4 people:

4 scaled and emptied scorpion fish
4 scaled and emptied sharp
4 pieces of eel
1kg dory scaled and emptied
6 potatoes
20 sections of bread
2 leeks coarsely chopped
1 onion peeled and sliced
2 cloves garlic crushed
1 bulb fennel
4 tomatoes peeled and coarsely chopped
parsley to decorate
In a pot, on a low heat, fry the vegetables with the olive oil, and a bayleaf. Add salt and pepper. Cook 15 minutes. Add the fish . leave to cook15 minutes, then add 3 liters of boiling water. Leave to simmer for 10 more minutes. Take out the fennel stems . Blend the ingredients. Add the saffron. Rectify the seasoning and reserve. To peel, wash and cut the potatoes into dice and boil for 30 minutes .
For the Aioli toast the bread sections, then rub them with a clove of garlic. reserve in a soup tureen.
Poach the eel, and leave them to cook on a low heat for 6 to 10 minutes. Lay out the potatoes in a large dish, then pose fish on them. Pour the sauce over. Serve with the toast and aioli.




I choose this recipe because it remembers the holidays of summer on the Mediterranean beach.

On this winter, in France (in Lozère!!!!), there was (much) snow to November to March so it’s very boring. I wait summer!!!

This winter, there was lots of snow and it was very cold. I chose the pistou because this is the only traditional recipe of Lozère that I know.

Cuisson: 2h30
Préparation: 45 minutes
Ingredients: For 4 people:
- 4l water
- 250 grams of fresh haricot beans
- 200 grams of kidney beans
-200 G of flat French beans
- 4 average potatoes
- 3 zucchinis
- 3 tomatoes
- 100 grams of spaghetti cut in small pieces or coquillettes
- Salt, pepper
For the pistou:
- 5 cloves of garlic
- 5 tablespoons of chopped basil
- 2 tomatoes
- 10 cl olive oil
- black pepper
- 50g of edam grated

Recipe. Prepare the French beans, shell haricot and red beans. wash all beans. peel and wash potatoes as well as the zucchinis. plunge the tomatoes in boiling water for approximately 30 seconds. Take off the skin, remove the seeds and crush them coarsely. To add all beans, potatoes and zucchinis whole, tomatoes and the pasta to the 4l of boiling water. Simmer for 1 hour approximately, stirring up from time to time.

Pistou: peel the cloves of garlic. peel, remove the seeds and chop tomatoes finely. put garlic, the basil and salt in a mortar and to carefully crush together. add the tomatoes, and the olive oil, pepper and grated cheese. The sauce obtained must be thick. Place this preparation in a large soup tureen and reserve. When the potatoes and the zucchinis are cooked, crush them with a fork. Place them in the pot with the other ingredients, mix and rectify the seasoning as necessary. BEFORE eating: pour soup in the soup tureen containing the pistou . stir and eat immediately.

This winter was cold and snowy. We didn’t have much snow except in January when it snowed between 30 and 40cm.
I chose this recipe because it makes you feel better when the weather is not good and when you can’t go outside. It is also a speciality of Lozere.



The recipe for the Fouace

For 2 kilos of fouace, you need 1 kilo of flower, 25grams of leaven per kilo, 300grams of fresh butter, eight eggs, 400grams of sugar, orange flower water, salt, and one glass of milk.
Mix the whole and knead during a half an hour. The paste, once worked must release a bubble of air.
Wrap the dough in a cloth and let it rest one night.
The following day, give a nice crown shape to it.
Put it in a hot oven until the becomes golden brown.
Beat an eggwhite until stiff, add a few drops of orange flower water and brush the fouace with it

I go with friends to the "city"(we can't do a lot of things there):
- if it's sunny we stay, for example, around the public garden or the cinema... We can buy sweets or magazines or food. We have fun and we can listen to music.
- if it's snowy or raining we stay in a bar and we drink hot chocolate. We can also listen to music.

III/During the holidays/out of home or school

I can see my grandma or my mother's friends who are very cool and nice in the Gard. I can do some shopping with my family. I have very good moments with my mum there. We enjoy ourselves. For me, it's fantastic to go there. They are my favourite moments.
I can go to the market in Uzès with my Grandma. Most of the time, I do the shopping with her or I take care of my body :she "teaches" me some things like what I should do if I've got dry skin. It's funny but not interesting.
With my dad, we can go to a foreign country. We go to the beach in the summer because he lives around Nice. We go to malls where there are goods shops. I love the Fnac, the Virgin, or H.Landers shops because we can find Levi’s clothes, converse or Doc Martens etc. I do sports like ski during the February holidays or walks during the sunny holidays. We do a fitness circuit the morning.
At summer, I can see a good friend who comes from Lyon. We go to village fêtes. I sometimes go to concerts. With my mum we go to the swimming pool or we go to another country with the car.

My name is Kévin and I’m 14 year old. I have two pets, a cat named Willy and a dog, Pirate. They are very nice. I’m an only child and live with my parents in Naussac. It’s a small town of France next to Langogne. In Naussac there are a big lake who is necessary for work of some nuclear plants in France. At school my favourite subjects are Math, Physic, French and English but I hate the subject who aren’t very important tha art. I have been playing the drums for 7 years and I want to become a professional drummer. For that I work a lots, about 10 hours a week during the school and about 22 hours a week during the holiday. I was at the GP of France in 2004 and 2005 and it was very cool, but in 2005, the suporter of Renault was very boring, stupid and dangerous because they threw big stone. And hate the U.S.A because they attacked Irak for oils and they attacked Afgnistan for fool American people, for the world think they search for terrorist. I’m happy the president of French refuse to combat with U.S.A, but I hate the governament of French because they don’t look after the young people ( we can see that during the émeute ) and they prefer to punish them ( than Sarkozy do ) and lots a french like him, but I think they don’t realized the young people become violence because we punish them and because they aren’t accept. Lots of of people come work in France and the French don’t accept that because they can’t work, there isn’t work every people ! But this stanger are men than French, but thFrench don’t understand that. But there are some people who come in French for have the money of the help of the governement, and the French hate that, but they don’t understand there is as stanger as French who do that in French. I hate think like them and I become very angry when I talk with peoples who think Sarkozy is the best polical man in France….. I think if we want to have better life we must change of political sistem but today there is too many coruption, it’s normaly because lots of men are always search for power and money so a sistem look like anarchy ( anachy is impossible, the men are too stupid ) is the solution.

Langogne is a town which is situated in the Northeast of Lozère in France. It is next to a big lake called Naussac which regulates a river called the Allier. At the moment however, it is empty because it was necessary to repair the dam. Langogne was built in 998 after J.C. Today we can still see the ruins of the big walls which protected it a long time ago. All the houses are placed around the church which is in the middle of the town. There are about 3500 inhabitants in winter but in summer there are a lot more.
